Sol Agave began with a simple belief: Mexican food should be more. More thoughtful. More refined. More enjoyable.
Our journey started in late 2014 inside a 17 foot food truck, driven by a desire to redefine how guests experienced Mexican cuisine. From the very beginning, we focused on creating dishes that were modern, complex, and crafted with intention while remaining lighter, fresher, and better for the body.
That passion grew into Sol Agave, now recognized as one of the best Mexican dining destinations in Utah. Over the years, our commitment to innovation, hospitality, and quality has earned us multiple Best of State awards, including Best Mexican Restaurant, Best Cocktails, and Best Dessert from 2022 through 2025.
Today, Sol Agave continues to blend tradition with modern technique, offering elevated Mexican cuisine, handcrafted cocktails, and an atmosphere designed for celebration. Every plate, every pour, and every guest experience reflects our original vision to make Mexican food more than expected.
